We have booked our wedding reception at a hilltop hotel but we have to finish at 11 am so any area/table booking in the music on the rocks is being considered.

Which hotel? There are alot of venues that have music. I am thinking of like the Piano bar at the Bellagio. The problem is that if your wedding has a large group it might be challenging to book enough tables for everyone. It might make more sense to rent one of the ballrooms and bring in a band or dj.
