In terms of bag checking, room service, and things of that nature - What do you tip?

I am still uncertain about what is acceptable and what is not. I usually just give $5 bills out. Is that enough or should I be tipping more than that?

This is for me... might not be same for everyone.  Also it depends on where you stay.  I usually stay at either the Planet Hollywood or MGM Grand so the amount might be lower than Wynn

$3-5 per night for room service

$2-5 for bellhop (luggage)

$2 for door person

You don't have to tip at all if you don't want to but I generally do it according to the services provided. If you are just bringing me up some food, you are only getting $2 but if you are taking my bags through a busy hotel and keeping them intact and safe, you get $5.

To my knowledge, most of the people working at hotels are paid like any job, so you probably don't need to tip them. But, it doesn't hurt to tip a little if you can.
