Are there any hidden hotels? Or maybe even bed and breakfasts that I could stay at instead of traditional hotels? I don't mind going to a popular hotel, but I've been to so many already, that going to something different would be nice.

The Artisan Hotel has a very interesting decor with carved wood and sculptures throughout the hotel. It is a bit off of the strip though so plan for ride sharing or driving

I went to the Artisan once for a pool party in May. It was pretty neato
